Chef Ryan Brand shares his “Decadent Cookie” recipe for the love month!

It’s the month of love and the perfect time to spoil your loved one by getting into the kitchen and cooking up something sweet!

Granny Mouse Country House & Spa Chef, Ryan Brand shares his favourite “all things sweet” recipe which he calls, “The decadent cookie” which is made up of shortbread, marshmallow sauce, peanut sauce and hazelnut truffles. The ingredients and directions for each segment of the recipe are as follows:

Step 1: Shortbread

  1. 100g butter, chilled, coarsely chopped
  2. 150g plain flour
  3. 45g icing sugar mixture, sifted
  4. 1 tablespoon water

Combine 1, 2, 3 in a food processor until it resembles a crumb, then add the water and blend it until the mix come together. Take it out the bowl and work it for about 1 minute by hand or until smooth.

Roll out onto a greased tray to desired thickness/shape and bake in a preheated oven for 12-15 minutes.

Step 2: Marshmallow sauce

  1. 100g marshmallows
  2. 100ml cream

Warm the cream in a saucepan. Once it starts to steam, add the marshmallows and stir occasionally until they are all melted. Put in a pouring jug ready to serve.

Step 3: Peanut sauce

  1. 100ml cream
  2. 1tblsp golden syrup
  3. 50g sugar
