Granny Mouse celebrates International hot and spicy food day!

Lamb Curry dish prepared by Granny Mouse Head Chef Ryan Brand

Granny Mouse celebrates International hot and spicy food day!

Celebrated annually on January 16th, International hot and spicy food day is an unofficial public holiday when all heat-lovers come together for one red-hot day to take their passion for spicy food to the extreme.

The celebrations include a variety of events, from habanero-eating challenges to fancy-dress contests and cook-offs of popular spicy food recipes.

Chef Ryan Brand from Granny Mouse Country House & Spa says that a traditional lamb curry is one of his favourite spicy food dishes. His recipe is below:

Ingredients

  • 1kg lamb stewing meat
  • 2 onions
  • 1tsp fennel seeds
  • 1tsp mustard seeds
  • 1tsp cumin
  • 2 bay leaves
  • 1 cinnamon sticks
  • 1tblsp curry powder
  • 1tblsp garum masala
  • 41tsp chilli powder
  • 750g garlic
  • 50g ginger
  • 2can whole peeled tomatoes
  • 1tblsp sugar
  • 50ml Sunflower oil

Plan of action

  • In a pot add the oil and the whole spices and cook over a medium heat and cook for 10 minutes stirring occasionally.
  • add the other dry spices and cook another 10 minutes adding splashes of water so the spices don’t burn
  • season the lamb and add it to the spice mix and cook for additional 5 min.
  • blend the whole peeled tomato, garlic and ginger together and add to the pot
  • add water occasionally if the liquid becomes too thick
  •  cook the meat till tender and its ready to serve
  • Recipe serves 4

Serve with rice, poppadum’s, sambals and assorted curry accompaniments.

As a Chef who is not shy to let his inner child play free in the kitchen, Brand is not afraid to experiment and come up with novel ideas, and adds that he gets inspiration from other South African culinary trend-setters. He is also passionate about buying locally produced products, sharing the same value system to that of Granny Mouse, as they source much of the fresh ingredients used in the kitchen– such as trout, guinea fowls, warthog and veggies – from local producers.
