  • 200g chorizo
  • 1 tin chopped tomato
  • 1 tin mixed vegetables
  • 1tsp garlic and ginger mix
  • 1 tin baked beans
  • 1/2 an onion, diced
  • 1tbsp cooking oil
  • Salt and pepper

  1. Pour all the oil and onions into a saucepan and cook on low heat.
  2. Slice the chorizo and add to the saucepan, continue to cook on low heat until the onions become translucent.
  3. To this add the ginger and garlic mix, cook for a further 2 minutes before adding the tinned tomatoes.
  4. Turn up the heat until it begins to bubble rapidly, reduce the heat until it becomes a mild simmer stirring occasionally so that it does not stick to the bottom.
  5. After about 10 minutes or so when the tomatoes have cooked, add the mixed vegetables and baked beans.
  6. Cook on low heat until the vegetables are cooked, season with salt and pepper.

Serve warm, with a choice of bread, rice or even as a topping with 2 minute noodles.
