A Mother’s Day recipe to Make your mouth water!
Mother’s Day lends itself to treat mum to the spoils, smiles and heart-warming messages of love. For many, treating mom to a breakfast at a restaurant on Mother’s Day is the norm and can be quite interesting if it is spent at Granny Mouse will their delicious bistro breakfast buffet options offering an array of fruits, cereals and hot options; however if you prefer to spend the morning at home by getting into the kitchen to cook mom up a storm, why not try wrapping your traditional breakfast into a Breakfast Bun, which is sure to provide a good start to her Mother’s Day! For the Breakfast Bun you will need:
Burger Bun x 1
Back Bacon x 2 slices
Cherry Tomatoes x 4 each
Mushrooms x 15g
Red Pepper x 10g
Yellow Pepper x 10g
Green Pepper x 10g
Eggs x 2
Red Onion x 10g
Spinach x 20g
Cream x 15ml
Salt x 1pinch
Pepper x 1 pinch
Oil x 5ml
Vinegar x 10ml
Water x 250ml
The method:
- Put the pot of water on the stove and bring to the boil. Once the water is boiling turn the heat down to a slight simmer and add the vinegar.
- Wash all vegetables under running water and dry off with a paper towel and set aside.
- You then need to have a cutting board and sharp knife (adult supervision) for the cutting of the vegetables.
- Start by slicing your vegetables into thin slices and keep separately. (Peppers can be kept together)
- Place a frying pan on a medium heat (120 degree), once hot add your bacon to the pan and fry till golden brown. Remove bacon from the pan and set aside.
- Using the same pan add you onions and mixed pepper and sauté till soft in texture, remove from the pan and put it aside.
- Wash the pan and put it back on the heat, add a little oil (enough to coat the pan. You will then need to sauté off the mushrooms and cherry tomatoes together, season with salt and pepper (about 2 minutes). At the same time crack open your eggs and add it to the simmering water (poached about 4 minutes).
- Remove mushrooms and cherry tomatoes from the pan and add in the spinach with a little oil. Sauté spinach for 30 seconds constantly stirring then add in your cream. Add seasoning and allow simmering for 1 minute.
- Cut your burger bun in half and toast till golden brown.
- Place the bun on a plate and start topping it with your cooked vegetables.
- Layer the vegetables in stages (mixed peppers & onions, mushrooms & cherry tomatoes) so if you look at the bun from the side you will be able to see the different colours. Once you are done with the vegetables you can add the bacon and top with your poached eggs.
- To finish off spoon the creamed spinach over the eggs and close with the top half of the bun.
